Single Serve Chopped Caprese Salad

July 7, 2014

Hi everyone! I hope you had a great 4th of July!  We sure did.  I hope to share some of the highlights from our week  soon. But today I want to share a salad I made for myself.   I’ve been trying to eat a little healthier and  I shared with you here how much I love the ingredients in a caprese salad so thought I’d make it easy on myself and chop everything up ahead of time.  I made a Single Serve Chopped Caprese Salad.  Here’s how I made it:

Gather your supplies.

You will need:

2 Roma tomatoes

2-3 slices of mozzarella

4-6 Basil leaves

Balsamic Vinegar

Olive oil

1.  Wash your tomatoes and dice them into bite size pieces.

3.  Chop your basil leaves into 1 inch pieces.

4.  Drizzle with olive oil and balsamic vinegar.

I think the flavor is better if it chills an marinades before you eat it, but I rarely wait that long because I can’t wait to sink my teeth into it.This could also be made for a large group if you wanted. I’m sure it would be a hit.
