I am always looking for a good summer grilling recipe. I love to grill for a couple reasons. One, it’s perfect when it’s really hot out and two, my hubby usually does the grilling so I get a break from cooking, score! I had a hankering for something Mediterranean so I decided to try my hand at creating a grilling recipe that combined my favorite flavors using a few Mezzetta products.
Grilled Mediterranean Chicken
Here’s what I did:
I have an aversion to recipes that have a bazillion steps and won’t try them. The longest part of this meal was cutting up the toppings, which was not long at all. I chose Greek olives, tomatoes, feta cheese, Mezzetta pepper rings and roasted red peppers. If you don’t like something I added choose your favorite topping.
Next, put your chicken breast on the grill and sear on one side. Then brush on your pesto. Flip the breast and grill with the pesto side down. Repeat on the other side.
Once the chicken is almost cooked add your toppings. Close the grill lid for about 5 minutes and let it heat the toppings up a little.
Carefully remove the chicken from the grill so you don’t lose all your toppings. I made some Mediterranean Quinoa and salad to go with the chicken. This was meal was a huge hit, summer grilling at it’s finest and it’s HEALTHY! It was fresh and full of flavor. My husband told me he was a little hesitant with the pepper rings on it but said it was his favorite part since they added so much flavor. I think next time I make this (yes, this will be a repeated meal) I will drizzle the chicken with balsamic vinegar once it’s on the platter.

- 4 Boneless, skinless Chicken Breast
- 1/2 cup of Pesto
- Chopped Mezzetta Roasted Red Peppers
- Mezzetta Pepper Rings
- Greek Olives, sliced
- 6-8 cherry tomatoes
- Feta Cheese
Instructions
- Chop your veggies into bite size pieces.
- Grill one side of your chicken breast.
- Turn over, brush the Pesto on breast and grill the pesto side.Repeat on the other side
- Grill Chicken until almost done.
- Add your toppings and shut grill 5 min. to heat up the toppings.
- Carefully remove the chicken so you don't lose all your toppings.
- Serve with your favorite sides. We like Mediterranean Quinoa and Salad.
