Today was my boy’s first day of school. It wasn’t just a normal first day of school but their first day of high school! Can’t you see their excitement over going to school? Or maybe its because their mother is torturing them by taking their picture (and then posting it on her blog!)
On the first day of school, I always try and make one of their favorite meals to celebrate the day. This year was no different EXCEPT I got called into work all day in a very busy office and knew I would not have a lot of extra energy when done with my workday, as I’m sure many can relate too. I decided I’d make up ahead one of their favorite meals- “Hamburger Pie”. It’s a quick fix casserole that you can make ahead. I’m going to show you how I make mine.
Gather your supplies:
1 lb. of hamburger
1 cup of Cheese
Cream of Mushroom Soup
Instant Mashed Potatoes or you can make real ones.
Milk
Pie pan
1. Fry up your hamburger.
2. When your hamburger is browned, add your can of mushroom soup. Stir them together.
3. Make your instant mashed potatoes as directed on the box. I use country crock instead of real butter to cut down on calories and fat.
Add your shredded cheese.
This meal literally takes 10 minutes to put together. You can heat it in the oven at 400 for 20 minutes or microwave it if you’re in a hurry. You can make this the night before, which is what I did or make ahead and freeze. This is definitely a quick fix casserole.
Serve with bread, Country Crock, and peanut butter.
After a long day of school and a hard football practice, they were ready to eat
