Busy Mom’s Apple Pie Recipe

Do you like the idea of making your family an apple pie but dread making and rolling out the crust?  Peeling and slicing apples?  Well, I have a very easy apple pie recipe for you today.  Not only is it easy, this recipe only takes minutes to put together. But it’s yummy!
Here is what you need:
1 packaged pie crust
1 can of apple pie filling
1 C Brown Sugar
1/2 C Rolled Oats
1/2 C Flour
 1/2 C Butter
1/2 C of Walnuts or Pecans (optional)
Take the crust out of the package and roll out on your counter top.  I took my Pampered Chef cut and seal tool and cut out circles.  You can get 12 out of a package of pie crust (2 crusts).
Take your circles and put in your sprayed muffin tins. I forgot to take a picture of this. Whoops!
Open your can of pie filling and add a large tablespoon to the crust.
Crumb Topping
1 C Brown Sugar
1/2 C rolled oats
1/2 C Flour
1/2 C Butter
1/2 C of walnuts
 
Stir together brown sugar, flour, oats & nuts. Cut in butter with a pastry blender until topping resembles coarse crumbs. Sprinkle mixture onto each mini pie.
Bake in a 400 degree oven for 30 minutes.Once cool remove from the muffin tins.
I also made some cherry pies as well.  Following the same process only using a can of cherry pie filling.
See I told you they were easy!
