Mary’s Yummy Cucumber Salad

I LOVE this time a year when fresh tomatoes and cucumbers ripen.  We grow a large garden and I’m always looking for some yummy ways to use them.  My girlfriend Mary is Italian and she is a GREAT cook! She invited my family for an impromptu dinner the other night and made this salad for us.  It was so good I wanted to share it with you and BONUS it’s quick and easy.

Slice 2 large cucumbers and 2 large tomatoes.
Add 1/2 cup of feta cheese.
Chop up @8 basil leaves.  
Chop up one onion.  Add your onion and basil.
Pour 1/2 cup of Balsamic Vinegar and 2 tablespoons of olive oil and mix. 
Pour mixture over your salad and chow down!  
Another bonus!  There are very few calories in this.
