I grew up eating a LOT of vegetables as a child. We had a very large garden and we had vegetables at every meal. One of my favorite veggies is spaghetti squash. I have always had spaghetti squash with spaghetti sauce and love it. My dauther came home and we decided to try a spin on our traditional recipe and make Baked Southwestern Spaghetti Squash. It’s quick & easy and very tasty.
You wll need:
3/4 can of black beans drained
3/4 can of corn drained
1 can of rotel
1 cup shredded cheese divided into half
Cut your squash in half and bake or microwave until tender.
Scoop out the seeds and scrape out your squash and put in a baking dish.
Add your beans, corn, Rotel, jalapenos & 1/2 cup of cheese an stir well. Take your other 1/2 cup of cheese and sprinkle over the top. Bake in a 375 degree oven until cheese is melted and bubbling. @ 20-25 mn.
Add your favorite toppings and enjoy! It’s very filling and oh so yummy!!
