Garden Fresh Mango Salsa

Happy Cinco de Maya!!!  I’m sharing today one of my families favorite Mexican recipes.  Whenever all the kids come home you can be certain this Garden Fresh Mango Salsa will be on the dinner table.  Let me show you how easy it is.

Here’s what you need:
2 mangoes
1 red onion
1 lime
1 jalapeno
Cilantro
Peel and dice your mangoes.
Mince your red onion.
Remove the seeds and mince your jalapeno.
Chop your cilantro and add 2 T. This step is personal preference.  I love cilantro, my husband doesn’t.  So I don’t add as much as I would love.
Put your ingredients in a bowl and mix.
Take your lime and squeeze the juice over the salsa and stir.
I think it’s a little better if it has time to chill but we like it either way!  There are never any leftovers at our house.  It’s really yummy and if you are into Clean Eating, this is a great recipe.
