Every December I have a slight issue? I have twin boys whose birthdays are Dec. 21st. The issue is how do I make them feel celebrated when Christmas is in full swing and they don’t like birthday cake!! Well, this year I’m baking shortbread cookies with chopped Peanut M&M’s to create a festive cookie, that looks more birthday than Christmas.
We LOVE shortbread but it’s too plain with nothing on them. I wanted something fun and festive, but not looking too Christmassy. I saw these Peanut M&M’s at Walmart and knew I could use them to spruce up my shortbread.
Let me show you how I made them.
I gathered all my ingredients.
You will need:
1 cup butter, softened
3/4 cup powdered sugar
1 teaspoon vanilla
1/8 teaspoon salt
2 cups flour
1 bag of Peanut M&M’s chopped
Glaze:
1 cup of powdered sugar
2 1/2 T of milk
1. Beat butter until creamy. Pour in powdered sugar, vanilla. and salt until well mixed. Slowly beat in flour and beat until just combined.
2. Divide the batter into 2 and shape each one into a log.
3. Slice into rounds and place on your pan.
4. Bake in preheated 350-degree oven for 10 – 12 minutes. You do not want them to brown. Cool.
5. For the glaze pour 1 cup of powdered sugar & 2 1/2 T of milk in a bowl and stir.
6. Lightly drizzle your glaze over the cookie.
7. Add chopped Peanut M&M’s.
8. Celebrate!!!
